About
Atla's Conchas is an Oaxacan micro-bakery run by partners Caroline Anders and Mauricio Lopez Martinez, who together have thirty years of bread-baking experience. The bakery opened in Spanish Harlem in 2024 and earned a place on Infatuation's Best Bakeries in NYC list in its first year before relocating to a 125-year-old farmhouse in Randolph, Vermont. Conchas and other pan dulce are made from full-inclusion flours milled in-house. Coverage in Bon Appétit, Seven Days, Vermont Public Radio, and Eater Boston.
