Alexx, a classically trained pastry chef with a lifelong marshmallow obsession, founded Vermont Marshmallow Co. because "marshmallows deserved better." She and her team of five make gourmet marshmallows in small batches using what she calls "The Wow Test"—recipes must be boldly flavored yet not overly sweet, pillowy-soft, and pull you out of time and space. Operating from a commercial kitchen, they ship nationwide.
