Unfiltered and bottled on-site. Each batch is distinct; recent releases include Batch 5 (hazy junmai with melon and cantaloupe notes and citrus finish) and Batch 7 (dry junmai with melon and tropical fruit). Vermont residents can email for current availability.
About
Vermont Sake brews at pico-scale in Monkton, Vermont, approaching each batch as a singular experiment with ingredients and method. The brewery uses rice varieties from Arkansas (Yamada Nishiki and Titan) and ferments with sake yeasts #7 and #9, some batches unfiltered and unaged, relying on gravity and time for clarity. Their lineup includes seven batches to date, ranging from delicate junmai styles with honeydew and banana notes to hazy varieties with melon and tropical fruit character.
